Trying to find James and Maria Saunders in 1871 census. Both were born in Suffolk. Had a son James abt 1868 Hackney.
In 1881, 1891, 1901 in Tottenham.
Have a bit of a puzzle as in 1861 found a James and Maria Saunders in Fressingfield and thought they are the same lot, found a marr in 1860. However the age of Maria varies. In 1861 gives her birth year abt 1839, all other census abt 1847. I have hopes the 1871 census will provide a clue, about their being the same family.
Appreciate any help

I have found a " maybe " for you
James Saunders age 2 b Pakenham Suffolk b abt 1869
James " age 39 b " ' b abt 1832
Mary Ann " age 25 b "" "" b abt 1846
John LAUNDERS (?)age 1 b " " b abt 1870
Also there is
George Hartshorn born as above age 70 (father in law)
William Landers born as bove 1837 age 34 (brother)
Guessing that Launders = Saunders.....
All living in Pakenham Suffolk

I think your Fressingfield connection is right.
But ages are still out. Strange things happen and possibly he married 2 Marias?
I have found them in 1871, indexed as, wait for it  as Samu Saunders, age 38, wife Maria, 25, and 2 children 3/5mths

I am just proposing this as Marias age is so different from 1861 cenus to 1871 Census.
Is it possible she died and James remarried another Maria?
There is this death;
Maria SAUNDERS,
December 1862, Hoxne, 4a 341
Unfortunately no age is given, but Hoxne is the reg. district for where the James/maria on 1841 Census were living.

To sum up I think you really need one of the children of James/Marias birth certs to find her maiden name.
James and Lucy were quite old in 1841 so it could be a second marriage or other children had left home by 1841
