Hi,
I agree he may not have gone to Australia but went seeking work elsewhere in the UK Scotland, Ireland, where he wouldn't show up on the British 1901 census.
New Zealand, Canada and USA were also other destinations for people looking for a new start in life. It has not been uncommon for famlies to believe their memeber went to Australia but in fact went to NZ. Similar things happened for USA and Canada.

I am 100% sure that this ship listing is for my great great uncle. His great grand-daughter e-mailed me the other day with all all this information. Her gran-aunt knew the family and this is where the story of him coming back to Ireland came from. There is also a break of twelve years between the 2nd and 3rd born child.
