Hi Vicki
At the moment I'm having difficulty in finding her baptism. Where did you get the date from as there doesn't appear to be any ES baptism in any Parish in Jersey.

Hi
I'm actually in the Societe Jersiaise Library at the moment. I wanted to look at a census return to see if it gave any clues. Apart from being slightly older everything suggests she was born in St Helier. However it doesn't confirm she was baptised here as I can find no records.
General Don did a Military Census in 1815 and there is only one soldier listed as Simpson but there is no Christian name so it probably isn't John.
Not sure where else to look.

I think the military is the most likely option.
I'm not sure about the Jo bit. Could be Joshua, Joseph or John. Interestingly there is a baptism for a Thomas Simpson on 4th May 1825 in St Helier to a John Simpson and his wife Mary. John was a Bombadier in the Royal Artillery. Godparents were John Simpson, John Fleming and Mary Ringland. Could you tie Thomas with your Elizabeth?
