Census and Death

I was wondering why family members don't show up on census forms, when they are close to dying.

For example: An 1851 Census is released but the family members dies in 1852, but the family member is know where to be seen. At first I thought it was because they were overlooked, but it seems this has happened to me on several occasions. I have also noticed that if either the Father or the Mother dies there usually isn't a Census form either. Almost as if the family disappears for a that time period that the census was taken.
