I have searched for Ellen Cheetham without find anything other than the details you already have.
It seems likely that if she married/died it would have been before 1837,as their is no ref to either on the freeBMD site

When you say you have searched the 1841/1851 census's did you search for both Ellen and Elijah seperatly, he must have been somewhere in the area of Eccles/Barton finding him could maybe give clues as to Ellen's whereabouts.
All the parish records will be at Salford RO.
On line I would suggest searching Genuki Eccles

there are some records that have been published.
As for your journeyman question, my understanding is that he is an apprentice trained craftsman that plies his trade for wages rather than being a master who employs others.
