I am trying to find the parents of James Claxton.
Also, any information relating to the ancestors of Emily is of interest as well.

Hi Howard, I see that you have the 1881 Census information. Edward is also on the 1871 Census for Ontario, which only lists the head of the household: http://www.collectionscanada.ca/archivianet/020108_e.html
1901 Census for Ontario: http://automatedgenealogy.com/census/cache/index.html This has a transcription of the census as well as a link to the actual census image from the Canadian Archives site. Edward is listed as E.J. Claxton with Matilda and Ira. Looking at the image, the date entered for the year Edward came to Canada is 1857.
Keeping in mind that dates written are not always the true dates, results from a search for Claxton from The Ships List, http://www.theshipslist.com/ships/Arrivals/Canada1857.htm, has two Claxtons arriving in 1857: a Mr. Claxton arriving on the Anglo-Saxon, and a T.J. (could it be E.J.?) Claxton arriving on the North American.
The Norfolk Genealogy site (Ontario), http://www.nornet.on.ca/~jcardiff/index1.html, has information on two of your Claxtons under the BMD section.
If you have trouble navigating any of these sites, please let me know.
Good luck, ~meg
