1851 hasn't been released on CDRom yet, just transcriptions on fiche published by Hunts FHS. I cannot see Samuel in Easton in 1861, but there are a number of other Morris's which may be of interest:
RG9/973 Folio 105A John Morris head marr 55 ag lab b Sharnbrook Beds Ann Morris wife 50 b Spaldwick Hunts Joseph Morris son 16 ag lab b Easton Wingfield Morris son 13 ag lab b Easton Samuel Morris son 11 ag lab b Easton Mary Ann Morris dau 7 scholar b Easton Thomas Easton brother unmarr 51 ag lab b Easton
George Morris head marr 46 ag lab b Easton Elizabeth Morris wife 43 b Titchmarsh Northants Thomas Morris son 11 b Easton Elizabeth Morris dau 9 scholar b Easton
Folio 105B George Morris head marr 27 ag lab b Easton Eliza Morris wife 29 b Catworth Hunts

Thanks very much for replying David, and what a shame the 1851 Census isn't available. I happen to have all the others you've turned up ie; Samuel MORRIS was the brother of the John MORRIS age 55, and they were the sons of Adam MORRIS of Bedfordshire.
Perhaps Samuel & his wife had died or moved away by 1861, anyway I'll just have to wait for the 1851 Census to become available.
Thanks again
Anne
