The difference between cousins 1st / 2nd

I wonder if anybody could explain to me the following:

What is a 1st cousin once removed ?

What is a second cousin ?

This is a chart from Mark Herber's Ancestral Trails.  It should help you to understand the various cousins.  You probably know what first cousins are.  You share the same grandparents.  Your first cousins' children are your first cousins once (ie one generation) removed.  However, your children and your first cousins' children are second cousins - you need to count the generations backwards until you reach the common ancestor.
