Master Butcher

Hi Everyone,

My 2x Gt Grandfather, worked as a Butcher in the 19th century.  Between the 1871 and 1881 census he goes from a Butcher to a Master Butcher.  And I wondered does anyone have any knowledge of the butcher trade and what would be the requirements to become a Master Butcher?

A 'master' just means someone who has his own business where he sets his own rates and employs others.
