Nic ... the following looks to be your man's arrival "downunder".    Seems he spent a few month's at least, as a "guest of Australia".

http://trove.nla.gov.au/ndp/del/home

"The Argus" (Melbourne, VIC) - 12 January 1875 - page 6  - [POLICE ]
.... William SANDERSON, a cuddy servant on the British ship, "Yorkshire"  ...
[Note:  More detail is given in the following article >> ]

"The Record and Emerald Hill and Sandridge Advertiser" (VIC) - 14 January 1875 - page 3

LARCENY --  William SAUNDERSON*  ... was charged with stealing a silver matchbox and leather cigar case ....
Prisoner was chief cuddy servant aboard the ship "Yorkshire"  ...
Sentenced to 2 months imprisonment with hard labour ...

[Note:  *  miss-spelled as "SAUNDERSON"  ]

{ Added:  "Cuddy servant" = waits at dinner on passengers on board. }

Mmm ... no actual passenger / crew lists for this "Yorkshire" voyage that I could find.

I've looked at "Mariners in Australian Waters" site  / available crew lists in and out of AUS... and numerous other things ... nothing obvious for any later journeys  (SANDERSON / SAUNDERSON).   [Shipping lists into Auckland only seem to throw up "passengers" (and not crew) ?? ]

So it'll no doubt be something of a mission tracking this man around the world.  :(

Congratulations Lu, always said my wife's family were a bit dodgy. Mind the comments from the family stories all add up to him being unreliable
