This has been really helpful, thank you.

The 1841 Census highlighted makes estimated date of birth 5 years later than other records.  Should I be concerned?

No, that is quite usual as birth dates in  the 1841 were rounded down to the nearest multiple of 5. So a person aged 19 would be listed as 15, a person aged 22 would be listed as age 20, and a person age 59 would be listed as 55.

Would I also be safe to take this to be his parents as it is the only record I an find that fits?

I would think you would be fairly safe with that one as it fits with a birth of 1811 as given in the 1851 census. Also Mary was used as one of his children's names.
