Well, the plot thickens! Thanks to the £1 offer on FindMyPast I have found two service records for Samuel, one for four days (31 July to 3 August 1888, where his parents and sisters are named, so definitely him). Before he enlisted he gives is occupation as Agricultural Labourer, living on a farm near Glastonbury, but gives his sister's address as where he will return to. In the second record he signs up for six years from 4 August 1888 (still definitely him because signature is the same). However this latter record seems to be missing some pages, and the last thing recorded is dated 13 October 1889.
So, I now don't think he is the blacksmith, either on the 1871 or 1901 Census.
Anyone any suggestions as to how I can find out what happened to Samuel after 1889??
Thanks for reading this and for all the earlier help.
Cheers
