Guess there were no parents named on his death registration at the Poorhouse?

I don't think the 1841 census entry will help you much. This looks a possibility for him, but maybe working away from home so no family names to help at this stage. The 1841 census as you know doesn't show relationships within the household:

William Henderson 45 Shepherd
Helen Henderson 50
Janet Henderson 14
Edward Waddel 16 agr. lab.

Address: Haugh, Crailing, Rox.

Just trying to see if you can find any clues in the names Edward and Euphemia gave to their children (to see whether they may have used some form of Scottish naming pattern - see for example, www.halmyre.abel.co.uk/Family/naming.htm). From other people's trees, are these their children's names?

George 1851 https://familysearch.org/pal:/MM9.1.1/XYQ4-4WL
John chr.1853 https://familysearch.org/pal:/MM9.1.1/X1BC-FNY
Edward b. 1853 https://familysearch.org/pal:/MM9.1.1/X1BC-F9F
James 1855 https://familysearch.org/pal:/MM9.1.1/N118-T4D
Thomas c. 1858
Robert c. 1862
Henry c. 1864
William c. 1867
Helen c. 1869

Have you been able to confirm the names of Euphemia's parents? Were they John Shiel and Helen Laidlaw? Names above of John as second born and only daughter Helen would fit well with this.

I wonder if we are looking at a possible name of George for Edward's father?

From https://familysearch.org/search there are two possible births in Jedburgh that might connect as siblings to Edward, with a father George:

Agnes 1829 https://familysearch.org/pal:/MM9.1.1/X1B4-YH1
Margaret 1833 https://familysearch.org/pal:/MM9.1.1/X1BH-MXY

This looks to be the entry in 1841 for this George Waddell and Isabel Preston in Jedburgh:

George Waddel 55 agri. lab.
Isbel Waddel 40
Janet Waddel 15
William Waddel 9
Margaret Waddel 6
Agnes Waddel 5...likely first Agnes died and name reused https://familysearch.org/pal:/MM9.1.1/X1B4-YHT
Helen Waddel 2...found this one now https://familysearch.org/pal:/MM9.1.1/X1B4-B8S

Address: Swinie, Jedburgh, Rox.

These Christening entries from the Jedburgh Associate Congregation Church whilst included the LDS database, are not included on the OPRs (and therefore on Scotlands People). OPRs were for the Church of Scotland records in the main, ie presbyterian.

Not sure how to follow up further for these records to see whether this George and wife Isabel had a son Edward.

Have you viewed the entry for the marriage in 1850 and the couple of Scottish christenings to see whether any family names shows as sponsors etc.?

1881 Census Euphemia Waddell gives her place of birth as Eckford, Roxburghshire.

1841 Census  Overwells Cottage Jedburgh
John Sheil age 40
Helen Sheil age 40
Euphemia 11,  Helen 9,  Ann 7,  Isabella 5
Thomas Sheil age 70   {probably John's father}

1851 Census Overwells.
John is aged 50 and his father Thomas is now aged 80 and was born in Hounam.

Gravestone Eckford Churchyard
Sacred to the memory of JOHN SHEILL who died at Gayfield Square, Edinburgh 26 March 1876 aged 77 years also of HELEN LAIDLAW his wife who died at Overwells 13 January 1860 aged 59 years.

Scotlandspeople will give you both death certificates which will give the names of their parents and mother's maiden name.

Eckford - Adjacent stone probably the same family.
Erected by GEORGE SHEIL in memory of his father THOMAS SHEIL who died 6 March 1850 aged 54 years also of his mother JANE HENDERSON who died 15 May 1865 aged 64 years also their son ROBERT  - - - who died ?  ?  1858.

This Thomas Sheil is likely the brother of your John and their father is probably the Thomas living with John in 1841 and 1851.

Edward Waddell's parents are probably George Waddell and Isabel Preston.  Pity Edward Waddell did not have a second daughter.
