Don't know what year you're looking for info on, but pre 1911, I would have thought it would be on a census and Directories, or maybe someone from the Ystalyfera LH society may know of a list.

There's an entry for  Jones Thos Dvd, Old Swan PH, Gurnos in Ystalyfera From Kelly's Directory South Wales 1910

In the 1907 phone directory for Ystalyfera the proprietor for the New Swan Hotel is given as O G Morgan (Owen Morgan).
In 1880 Slater's Directory New Swan Inn is Morgan Morgan, Old Swan Inn is John Abraham.
The 1875 Worral's Directory gives Swan: William Jones.

According to an informant on his father's Death Certificate (Moses Williams of Glantwrch) there was a John Williams residing at the Old Swan Inn, LLanguicke.  This was 1863
