Hi

You will find Carmarthen Union Workshouse 1841 Census at HO107 Piece 1387 Foilio 8 Pg 1 - Civil Parish St Peter, County Carmarthen. Using this info it should  help you to find the remaining census info for 1851, 1861, 1871 and 1881. Although you will find the 1881 census for Carmarthen Workhouse and other info on www.workhouses.org.uk

Regards

Z
