As both Bedfordshire boy and myself have said, why would she marry as Sarah Adams anyway?

In any case, her baptism is March 1786/7 (the original image is viewable on FindMyPast) which means she was baptised after the marriage and most likely born after the marriage, so there would be no reason why she would marry as Adams.
