I cannot help you with your enquiries about Ireland, but this  1933 obituary for Ellen TALBOT says she arrived per "Dunbar Castle" 1878

Their first child registered in QLD was 1879

Civil Registration began in Ireland in 1864.
So you will be reliant on Parish Registers - and for that you need to know the religious denomination.

There is nothing on the Church Records on www.irishgenealogy.ie.
These are mainly, but not exclusively, Protestant records.

Catholic Parish Registers are available at registers.nli.ie
But there is no index ::)
You have to know which parish to look at, and then browse the images, page by page.

Fennor is in the parish of Gortnahoe

I can't find anywhere called Consaul.

This Obituary for Patrick who died a week after Ellen in 1933 (aged 100 years ;D) suggests a marriage date of 1873.
Bearing in mind of course, people informing for such news items a re not always correct in their dates and so on.

Images of Civil Certs of marriages from the 1870s aren't online yet but there is an Ellen Campion and Patrick Talbot with the same page and Vol number registered Urlingford 1874.

Link to Patrick

Ellen
http://www.rootschat.com/links/01khc/

Urlingford would be the correct Reg District for Fennor

Left hand page so at least it's the correct parish for Ellen.

Had to do a bit of editing made a mess of the names.

Patrick and Ellen had at least one child in Ireland
Honora in 1875
https://civilrecords.irishgenealogy.ie/churchrecords/images/birth_returns/births_1875/03113/2141830.pdf
Their address is Fennor.

There is a strong chance Patrick is from the same parish as Ellen as Gortnahoe parish is on the border of Tipperary and Kilkenny. Also his death notice gives Tipperary as his home county so it's likely he comes for a place on or near the border of the two counties.

I see for the passenger list they also had a John and Johanna, you should be able to find their births on Irish Genealogy
https://civilrecords.irishgenealogy.ie/churchrecords/civil-search.jsp

You should also be able to work through the parish records to find more family.
It's more fun if you do it yourself but we will help if you get stuck.

Patrick is a problem now, as you can see from Ellen having a place name helps a lot.
Can you tell us where you got the place name for Patrick, if it's on a free to view site you could post a link, or if you have a copy of on original image post a snippet of the place and a little of the surrounding handwriting for comparison, maybe we can work out where it is.

As I have mentioned, I am not very useful with  Irish records, but I do see records for-

Honora TALBOT
1st Mar. 1875.
Born Urlingford Kilk. Ireland
Parents Patrick TALBOT & Ellen CAMPION
Baptism
2nd Mar. 1875
At Gortnahoe, Tipperary.
Living at Fennor.
Aged 0

John TALBOT
4th  July 1876
FHL no. 255959
Parents Patrick TALBOT & Ellen CAMPION

Johanna TALBOT
1th Nov 1877
FHL 255999
Parents Patrick TALBOT & Ellen CAMPION

I apologise Sinnann if I am repeating the information you have given ( I was not able to open the links you have given above ::))

Some or all of these people are possibly traceable in Australia, but as this is not  the focus of your current inquiry, I will leave that for another time. ;D

Sue

ADDING
Like you Sinann, I see all 3 of these children on board Dunbar Castle with their parents as given above. (Surname TALBERT)

The recent update to Irish Genealogy means the links for the marriage posted earlier in this thread no longer work, the good news is the marriage is now online
https://civilrecords.irishgenealogy.ie/churchrecords/images/marriage_returns/marriages_1874/11239/8121422.pdf

Patrick was living in the townland of Urard, his father was John and he was deceased.
