do you have the death certificate for Evan to give a clue about his age? Margaret shows as married in 1851 and widow in 1861. There's a possible burial in Dowlais 10 April 1855 for Evan Humphreys aged 60, death reg june qtr 1855 Merthyr Tydfil vol 11a pg 192. Marriage was 1824 so birth would have been earlier than 1808.

As for possible churches around Llanover, list here

http://www.genuki.org.uk/church_list/MONLlanover

and the list of what Gwent archives hold
http://www.gwentarchives.gov.uk/media/74698/list-of-nonconformist-registers-120218.pdf

no baptisms in the established church showing up for the Humphreys children, so family possibly non-conformist.

4
marriage was dec qtr 1887 so they won't be together in 1881.

Tremissary Lodge may have been Mr Stopford's. Death/burial record

Thomas was a lime quarryman on the census, so limestone not slate.

https://www.dyserth.com/quarrying.html

The link shows Upper Foel Road, census is Ucha Voel, same place.

Quarrying and hewing I would have thought were close enough to allow for transfer, both cutting jobs. There was probably more work available in coal at the time.

I think the school she went to was this one

which might help identify which Picton Inn it was, so in Picton Street. (many places named for Thomas Picton - he died at Waterloo)

I think the Thomas Charles Williams from the probate record was the nephew of Lewis, son of his older brother Charles
https://www.familysearch.org/ark:/61903/1:1:X7P9-J38

Charles Williams married Sarah Dury 7 July 1891 in the parish church of Gelligaer when he was 42 and she was 19

birth reg Thomas Charles Williams sept qtr 1904 Merthyr Tydfil vol 11a pg 734 mmn Dury

Thomas Charles was baptised 26 June 1904 in the parish church son of Charles Williams, engineer, and Sarah of Hengoed.

well the birth was registered sept qtr and she was baptised in July, so born at the earliest May (6 weeks allowed for registration) and before end of July. So you could search using each month & exact year and see if any possibles appear.
