I think the term "gamekeeper" might have changed over time.  The modern understanding is a someone employed by an estate to manage the game.  A steward of sorts. 
In 1731 the Dorset Quarter Sessions Book shows that my ggggg grandfather was appointed by Sir Robert Long Bt to be his gamekeeper for the Manors of Burleston & Southover.  These two manors were adjacent to Tolpuddle in Dorset where my ancestor was the Vicar.

In 1838 my ggg grandfather, Henry Plowman, was "included as Commissioners in the New Act for granting a Land Tax and Duties on Personal Estates, Offices and Pensions, in the county of Dorset".

He was at that time a Surgeon retired on half pay from the Royal Navy.  I have not yet found what duties that entailed or if it he received any form of remuneration. 

Does anyone have any knowledge of the role please?

I too had a look at Fairbairn's Book of Crest.  One of the families listed for the motto was North.  However, the nearby entry for Norris & Norreys has "A demi-stag Or attired Sable pierced through the body by an arrow of the last headed ans feathered proper."  The illustration on Plate 119/5 does differ in three ways:
  • Direction of the arrow
  • The arrow has gone right through the body
  • Drop of blood

If the Heraldry Society &/or John Tunesi are having problems, it probably only leaves the College of Arms.  You can raise a query on the College's website and it will be looked at by the duty Officer of Arms.  I don't think you can send an image via the webpage.  There may be a fee involved if it is a complex search.

Without having time to look at this is any detail, I will say that the use of quarters in English heraldry is fairly fluid.  The armiger can pick and choose which, if any, to display.  The only caveat is that, if selecting from inherited quartered Arms, the paternal Arms that brought those quarters must be displayed with them. So no cherry-picking just the most impressive ones.

There do not seem to be any entries in An Ordinary of Arms Contained in the Public Register of all Arms and Bearings in Scotland which covers the period from around 1672 to 1901.  This evening, if time permits, I will look in my copies of An Ordinary of Scottish Arms pre-1672  and Volume 2 An Ordinary of Arms Contained in the Public Register of all Arms and Bearings in Scotland which goes to 1973.

The pre-1672 Ordinary has 6 entries from 5 different ancient heraldic rolls but without any biographical or geographical details except that for Pettigrew of Pettigrew "Gules 3 mullets and between them a crescent Argent".  Pettigrew of Pettigrew (or of that Ilk) would be the Chief/Head of the Name & Arms of Pettigrew.
