I have a Samuel COOPER [b c 1847] and a George COOPER [b c 1850]; possibly brothers who turn-up in Canada for the 1871 census.

There is a connection with Wilstead because they are living with a family who emigrated from Wilstead by 1871., but I cannot see them in Wilstead on the 1851 index  :'(

Samuel married a woman called Mary [?] and by 1871 they had a 2 year old son called Stephen who was born in Canada but I cant even find their marriage to begin hunting them down

It isnt them but I only have them in Canada 1871 and a tentative link with Bedfordshire anyway!

There's a George Cooper b Wilstead in the 1861 census:

Mary A Cooper wife 32 b Elstow
Jessie son 17 ag lab b Wilstead
George son 10 b Wilstead
Caroline 8; Sarah 5; Elizabeth 3; Charles 2; Alfred 5mths all b Wilstead

I can't see a Samuel born in Beds 1847 +/- 2 in either 1851 or 1861

George is about the right age...so I will keep that in mind if he is the right George...then his Dad was charged with highway robbery but not convicted [I havent seen the Assizes info but it seems there wasnt enough to convict Henry].

Shame about 'brother' Samuel, if he is a brother...the 1871 from Canada doesnt say
