I have just discovered a link in my tree to Saunders family of Kirkwall.  Ann Saunders, daughter of James Saunders and Margaret Bews married David Flett in 1794.  The marriage was in Kirkwall but it appears that their children were born in Firth.   It is an unusual name for Orkney so presume we must be connected somehow.  Glad to share what little info I have.

there are a few saunders families on the census ,s for orkney and 2 monumental inscriptions, any particular family you are interested in ?
