I think that this is probably Eliza....

1861

Lutterworth RG9/2244 Folios 7/8 Pages 8/9

Amos Jarvis Head M 26 Journeyman Baker Kilby Leicestershire
Eliza do Wife M 24 Leire Leicestershire
John do Son 2 Arnesby Leicestershire
Elizabeth do Daugh 2 Arnesby Leicestershire
Thomas do Son 4mo Arnesby Leicestershire

Arnesby

John and Elizabeth were twins (see same birth registration) but I think John died young (in view of another son called John appearing later).

I now think that Eliza died in 1862 and Amos remarried in 1864. I think this shows his second wife (Elizabeth Bartlett) who also died before 1881....

1871

Lutterworth RG10/3220 Folio 95 Page 12

Amos Jarvis Head M 35 Baker & Publican Leicestershire Kilby
Elizabeth do Wife M 32 Leicestershire Peatling
Elizabeth do Daur U 12 Leicestershire Kilby
Thomas do Son U 10 Leicestershire Arnesby
William do Son U 4 Leicestershire Arnesby
John do Son U 6mo Leicestershire Arnesby

Main Street, Arnesby

Amos can be seen as a widower in 1881.

Despite the apparent age difference I think that this is probably Ellen. Her birthplace in 1901 reverts to Snitterfield having been listed as Leire in the intervening years.

1871

Lutterworth RG10/3223 Folio 39 Pages 3/4

William Burdett Head M 36 Agricultural Labourer Leicestershire Willoughby Waterless
Ellen do Wife M 27 Leicestershire Leire
Eliza do Daur U 6 Scholar Leicestershire Lutterworth
Sarah do Daur 4 Scholar Leicestershire Peatling Magna
William do Son 1 Leicestershire Peatling Magna

Peatling Magna Village.

They can be seen in 1881 on http://www.familysearch.org/ with some younger children.
