Hi Tom
You asked me earlier "where did your Doolans come from? when did they arrive?" which had me double checking my findings.
To this question I have no proof whatsoever so I have been checking.

From the death & marriage records I have no parents names but I can establish a approx birth date of 1831.

From the Assisted Immigrants records I find a John Doolan arrived Sydney on the David McIver 1852 with a recorded age of 20 which indicates a birth year of 1832 so one can presume that I have the correct John Doolan.

My records reveal a birth in London however I have found nothing to support this so for now it is not proven. Looking at the shipping records of the David McIver It departed Liverpool and went to  Plymouth before heading to Australia. 

Unfortunately at present I can not access our Australian "Assisted Immigrants list" to find the image from the actual register (1852 David McIver) to double check things but it could be simply something in my upgrade to Win 10 so possibly somebody else may find his "Native Place" from the record https://www.records.nsw.gov.au/archives/collections-and-research/guides-and-indexes/assisted-immigrants-digital-shipping-lists

I do know they were Catholic and with the name Doolan I expect it will be Ireland.

Hi Rob,
maybe you already know that no records for Catholic birth deaths and marriages were kept before 1829 [maybe a few] so if John Doolan was born in Ireland after that date, there should be a record.
Thanks to Daniel O'Connell's Catholic emancipation that changed after 1829.
If your Doolans came from England, I presume they have records pre 1829.
How would I find a death record for Daniel Doolan? whats the fee?

While it true there isn't many registers before 1829 it would be an error to believe all registers survive after 1829.

To find the basic death info in Australia for anybody is free and easy. For New South Wales simply Google "NSW BDM" whose link I provided earlier. Then choose "Family History" ... Take a quick read so you know that for privacy and identity theft purposes deaths are only shown to 30 years ago (Births are 100 years ago).
Click "Start Searching"
I've just done a quick search and found a Daniel Doolan that died 1903 in Mudgee aged 65yrs which indicates a birth year of 38 by my quick calculations. (registration No 6865/1903) If that is him you can purchase the full record which may reveal his parents and place of birth.
Now I usually use Google Earth or Maps to take a look around to actually see where places are in relation to each other.

The other place I'd look is "austcemindex.com" but it is mainly a headstone search. A quick look reveals

Doolan Daniel   8 Jul 1965     85   Rookwood Catholic NSW   Lwn 2 1258         
Doolan Daniel   3 Jun 1958  73   Rookwood Catholic NSW   M2 20, 2094

Rookwood is on the other side of my suburb so I could always give you photos.

I just spotted John Doolan aged 20 on the DavidMcIvor.
this is what I saw
DOOLAN   William   A 16   1852   24   Tubbrid   John / Bridget   living in Tubrid   None . R.C.      {also John,20}   Ship =   David McIver

Tubbrid is south of Cahir.

Hi Rob, that probably is the Daniel Doolan I'm looking for, although he would have been aged 69 in 1903, not a big difference from age recorded as 65. For some reason I can't find him on BDM website, I'll have to come back to that later.
I've done a marriage search for Catherine and Mary and found nothing in Australia, to search National Archives I need to know spouse name, so where should I go from here?
Have you found out anymore about the Doolans of Tubrid Tipperary? I looked through phone book yesterday and found no Doolans in Tubrid.
Incidentally I think there are more Doolans in Australia than anywhere else in the world.
