Here are other Ditchfields living in Elford in 1841:

Elizabeth Ditchfield, 15, F.S. (living with her employers)

William Ditchfield, 30, Ag Lab
George Ditchfield, 5
----
Edward Ditchfield, 25, Ag Lag
Sarah Ditchfield, 25
Thomas Ditchfield, 1
----

From the above families, William (30) and George (5) are living next door to your Emma Ditchfield... and in the 1851 census Geroge (15) is living with her!!! Could William be her father???
