Online Trees have James dying in 1857 in Sherburn Hill Durham.None of them give Sarah's maiden name.

I have been following up all the advice and suggestions, and I think I have made some progress.
I think, but still looking for further confirmation:
James Boulton Bpt 17 Aug 1816 s/o Benjamin and Catharine, in Wrexham.
Sarah Amos Bpt 9 May 1819 d/o John and Margaret, in Halkyn, Flintshire. Born 3 May 1819.
Marriage 10 Sept 1836, Bagillt, Flintshire.
1841 census James and Sarah Bolton, Ruthin, Denbighshire. HO107 1404 23/7 7. Ages are not exact, but the five year rounding would work. James occupation given as shoemaker.
Thomas Boulton bpt 28 July 1843, Holywell, s/o James and Sarah, James is a shoemaker.
Still nothing on 1851 census.
James Bolton died 2nd quarter 1857 10A 144 in Durham.
1861 census, Sarah, a widow with two sons, which is where I came in.

So, a bit more investigating, but many many thanks for the suggestions, and if you have any more please don't hesitate!

Hi

I don't think the 1841 in Ruthin is them.

I've just popped into Durham records online and found this:

The burial of James Bolton:

St Cuthbert, Shadforth
2 May 1857, James Bolton of Sherburn Hill, aged 40

This would fit with Kay's find for 1851:

Possible 1851in Sherburn Durham

James Boulton    34 Fir? Man b Wales  Married
Henry Boulton    13 b Manchester
Thomas Boulton 7 bWales

HO107 Piece: 2391 Folio: 338 Page: 33

and tracing back:

1841? Living at Pump St Manchester.  Both James and Sarah not born in County

James Batton 30 Shoemaker
Sarah Batton 25
Henry Batton 3

This would also fit with their marriage:

Marriage in Holywell 10 Sept 1836

James Boulton to Sarah Amos

I'll see if there's more info on Henry and also the whereabouts of Sarah in 1851.

I think that this is eldest son Henry in 1861:

RG9/3745/4/1
6 Shadforth Street, Sherburn Hill. Co. Durham

Henry Bolton, 23, b.Manchester
Jane, w, 22, b. Ireland, Co. Down
James, s, 1, b. Sherburn

Thanks for this, Gadget.  I was a bit reluctant to accept the Manchester side, the 1851 entry introduces the older son, and doesn't include Sarah or Benjamin.
The Batton one in 1841 is a bit odd too.  They were married in 1836 in Wales, apparently moved to Manchester and had a son, then went back to Wales for the second son, then to Durham, had a third son.  I don't suppose it's too unusual for families to move around a lot, though, and the 1861 census for Henry and his family is pretty convincing.
So, still lots of investigating to do!

And this fits with Kay's Fir man:

Baptism
St Cuthberts, Shadforth
9 March 1848 Benjamin Bolton of Sherburn Hill, son of James (fireman) and Sarah Bolton
