Clements Problem

I am stuck on the origins of my 2nd great grandmother Catherine Clements.   According to various censuses her year of birth was 1816 or 1817.    Her place of birth in 1851 and 1861 was given as London and in 1871, 1881, 1891 was given as Aberystwyth.   In 1841 there was a Catherine Clements, age 25, working as a servant in Aberystwyth, born in county.   She died 1900 March quarter in Aberystwyth.
She married William Jenkins 18 Dec 1842 in the Parish Church, Llanbadarn Fawr and on the marriage certificate her father was Edward Clements, a soldier.
On them face of it, she was probably born in Aberystwyth.   Any assistance greatly appreciated.
