There is an obvious family that has Frederick born Plumstead with father James and mother Sarah in 1891 census on ancestry.
But James is not a gunsmith.

What do all the question marks mean - you can find the censuses but not the actual birth?

1881 has James occupation as Labourer Rl Arsenal  so probably works at the Royal Arsenal
