Because no father's name is given, am I right to assume he was illegitimate?

Yes. 

That is a very unusual forename. Unless you already know where it came from (eg mother or grandmother's maiden name), it could be a clue as to the identity of the father.

I can only find 2 baptisms within the time frame of her having a son in 1762 both in
Kirkby in Ashfield

3-12-1739 ANNE dau of William and Anne Heath
