Bishop family

I have a George Bishop born in Sussex who married a Mary Gillen 23rd September 1895 in Armagh. They had, as far as I know, Francis Henry born 1895 Mary born 1897 Josephine Elizabeth born 1904 Vincent George 1906 and Patrick Edward born 1909. If anybody has any information on this family I would be grateful especially the deaths of George and Mary. I have the 1901 and 1911 Irish census. George was in the armed forces which could account for the gaps in the births.

For reference here are Mary Bishop, mother & children in census records-

I found 6 children born in Armagh in GRONI's database-
1.   Francis Henry (7 Dec.1895)
2.   Mary (3 Jan.1897)
3.   Josephine Elizabeth (28 Dec.1903)
4.   Vincent George (25 Aug.1906)
5.   Patrick Edward (3 Mar.1909)
6.   John (28 Nov.1913)

Seems to have been a mixed marriage as there is a Catholic baptism record 11 Sept.1895 (shortly before his marriage) in Armagh of George Bishop, age 24, Methodist.

I also searched GRONI for George & Mary's deaths in Armagh and found 2 possibilities-
Mary Bishop (age 59) 19 Sept.1934
George Bishop (age 69) 23 May 1941
Away sorting out DNA matches... I may be gone for some time many years!

Thank you for the extra info.  I did wonder if there were any more children after the 1911 census and I did also wonder as to whether George changed his faith which you have confirmed to  both.  I would also say that the deaths of George and Mary which you have given me could very well be them.
