Can you give some more information please?
Do you know what religious denomination they were.
Have you found them in the Ireland Census 1901 (Free on-line)
Do you know what occupations they had.
Have you got death certs for them? 
As civil registration for births only commenced in 1864, you will only have parish records prior to that.
The National Library of Ireland has recently released their R.C. records on-line but you would need to know which parish or you would have a lot of searching to do.  (If they were R.C)

Do you know name of the City street or Townland  in the County where they lived.

This may help to locate which parish they married in or Baptised their children.

Both surnames are plentiful in County Kilkenny.

Hi I Have a Robert Burke born 1852 Cheekpoint, Co Waterford who went to Liverpool as a young man never came back we can't seem to trace him. Jim

Conahy Calling has made great suggestions on where to start and what would help us to search for you; I'd like to add:

There are 48 Robert BURKES and there are 15 Robert BOURKEs on the Irish Census in 1901
None are from or in Kilkenny - if he was military or police only his initials would have been shown

Ask yourself the questions already suggested and specifically
     what do I know that is proven to date?

Have you found them on the 1911 census?
     This is helpful in stating how long a couple is married and how many children they had
Have you located the names of their children
     This can sometimes be helpful in what other names were common in the family
If they had several children some one else may be researching them
     Look for other family trees on line - sometimes as simple as using a search engine
