origins of "Stephen's Mortification" Fetteresso and Dunnottar

I'm researching the surname Stephen.... Anyone in Stonehaven know about this please?
Found in the Angus and Means Almanac 1846 - 1846:
STEPHEN'S MORTICATION
The Ministers of Fetteresso and Dunnottar, Trustees

A mortification I believe can be the disposing of lands for religious or charitable purposes.
Question: who was this particular Stephen?
Kincardine - STEPHEN, FOTHERINGHAM, GOWANS, GRIEVE
Fife - BARCLAY, SELLAR, REID, KILGOUR KINSMAN
