John and Sarah Holman family - 1881 - 1901 (Southcoates / Sculcoates)

Am trying to track down records of my gg parents.
I know they lived at 12 James Street, Southcoates in 1881. My gg grandfather John Holman born circ 1845 was a blacksmith (from Cornwall). His wife Sarah Ann was from London born c. 1846.
By 1901 Sarah was widowed and living at 73 Freehold Street with her son Henry and grand daughter Adelaide.
Big question when did my gg grandfather die and what were family doing between the 1881 and 1901 censuses. Can't find them (or any of their children) in 1891 census.
Any local help much appreciated.
