Try bearing in mind that the census entries are the enumerator's interpretation of the family schedules, so there is an element of error.

I'm 95% sure it's meant to say Geo, but the "o" has been very deformed to look like an "s". Or as Colin says, the enumerator thought the family schedule said "Ges" when it was really a badly-written "Geo".

Around this time you're likely to see repeated names in families, so it's likely he was George and his son was named after him.
