How would I find any information on an inmate in Chiltington Workhouse in 1874.

East Chiltington was a parish within the Chailey Poor Law Union.
From the start of the Poor Law Unions, in 1834, Chailey used the existing workhouses at Chailey, Ditchling and Ringmer.

In 1873 these were replaced bu a new workhouse on Honeypot Lane, East Chiltington.

East Sussex Records Office will hold any records, but they only appear to have Guardians' minutes (1835-98) and Accounts (1879-98).

Which Chiltington are we talking about?   West Chiltington exists too.  It is in the Horsham district.    Can you give us a few more details?

The death certificate says sub district of Ditchling. The address at time of death says
Workhouse Chiltington.

That will be East Chiltington then - Ditchling parish was in the Chailey Union.

Chailey Union records are in the East Sussex Record Office, now at The Keep in Falmer.

Old people cared for by the Union were mainly in Ditchling workhouse until 1873 (plus a few younger paupers placed there to help care for them). Adults and very young children were at Chailey, school age children at the workhouse school at Ringmer.
