Where are Rees Thomas, wife Elizabeth and daughter Margaret in 1861?

My ancestors always do their level best not to be found!

In the 1851 census, Rees aged 50, Elizabeth aged 38 and 1 year old Margaret are in 45 Priory Street, St Peter, Carmarthen , with a visitor and a couple of servants.  Rees is described as a landed proprietor born Carmarthen.
Piece 2473, folio 349, page 30, schedule 145 - sorry, I am useless at posting census refs!

In 1871, they're still in Priory Street (different number possibly?), Rees this time described as a landowner.
Schedule 190, piece 5497, folio 22, page 38

Try as I might I cannot find them in Carmarthen in 1861, and seemingly elsewhere in Wales or England.

Rees dies in 1873. In 1881 Elizabeth is at 116 Priory Street, a retired chemist, with daughter M E Thomas, and others.

Elizabeth dies in 1887 and Margaret goes to live with a cousin, she's in his household in the 1891, 1901 and 1911 census. I don't know whether this might have a bearing on where she was in 1861, but in 1891 she's described as imbecile, and in 1911 as feeble minded.

If anyone can find Rees, Elizabeth and Margaret in 1861, I would be very grateful, they've been annoying me for ages!

I can't vouch for the  source but a previous thread said "Pryory Street"(sic) was part of the "damaged" 1861 census.
The district of St Peters is not on the missing list.

They're certainly in the local papers in priory Street during the period, Rees generally is a juryman at the assizes (and later a councillor?) and also some family notices, including


The Welshman  (Carmarthen edition) 7th April 1854
On the 3rd instant, aged 72 years, at the residence of Mr. Rees Thomas, Priory-street, in this town, the Rev. Thomas Francis, late Vicar of Myddfai, deeply and sincerely lamented by his relatives and friends.

The Welshman (Carmarthen edition) 3rd December 1858
On the 2nd instant, at Priory-street, in this town, much and deeply regretted, aged 7 years, George Rees, the beloved and only son of Mr. Rees Thomas.

EDIT: couldn't resist a quick look at my tree, Reverend Francis is there with them on the 1851 census.
