Francis Shelton; who was his wife Eliza or Sarah?

Have a few pieces of information that I am having difficulty putting together.

Mary Shelton married William Dale on 25 Oct 1852 in Leicestershire.  Mary's death certificate states she was 18 when she and William married therefore a possible birth around 1834; also notes they married in Rosington Leicester.  I am unable to locate a place called Rosington.  However I can locate a Cossington or  Knossington.  Is the place name simply a human error given that Mary died in Australia and the Dr completing the death certificate was not sure?

Mary and William arrived in Australia in the then Moreton Bay colony on board the John Davis on 10 May 1855.  The passenger list states that Mary was 26 years of age. This calculates to her birth being about 1829.  Her parents were recorded as Francis Shelton and Eliza [deceased].  Clipping 1 also shows her father’s location which may be Eaton or Exeter???
Mary's death certificate also states she was born in Eaton, Leicester.
I located a marriage record on FamilySearch at  https://familysearch.org/ark:/61903/1:1:NNMF-36K but no mention of her mother's name.

I looked for her father's marriage to Eliza without any success.

A number of trees on A have Mary's mother as Sarah however this is different to her immigrant records which I am assuming she provided the details [yes dangerous I know].

I located a baptism transcript on A that has a Mary Shelton's baptism on 17 Aug 1827 at Harston, Leicester however parents are Francis and Sarah

I located an 1841 census record for Francis Shelton with the correct parish of Eaton however his wife is Sarah.  There are a number of children one being Mary with the approx and correct age of 12.   (HO107/587/17/ 9 p12, Eaton, Leicestershire)

I located a possible census record for William Dale on A at Class: HO107/2091/115 p 22 its very difficult to read.

Mary and William came to Australia with 2 children Ellen 1 year old and Elizabeth and infant.  Their religion is given as Wesley and am assuming this means Wesleyan.
 
So my questions are:
Who is Mary's mother? Eliza or Sarah or ?
When did Francis and Eliza/Sarah/? marry
Where was Mary really born?
Where was Francis living when Mary left for Australia?
Where & when was William born?

I feel like I am going round in circles and had to share my frustration in the hope of a way forward;D

We know Eliza was deceased by 1855.

She could have been deceased by 1841 and Francis remarried to a Sarah by then.

Have you checked for a marriage of a Francis (widower) to a Sarah, between 1829 (earliest for Mary's birth) and 1841? In Eaton and also neighbouring parishes, as marriages were traditionally in the brides home parish, even if the couple then settled where the groom lived and worked.

If the family were Wesleyan, then you will need to see if there any any surviving non conformist records for the area when it comes to baptisms for Mary and Sarah.

I think Liz could be right about the remarriage. Look at the 1841, there is a huge gap between the last two children.

On Mary's marriage cert, what is her address and occupation? And names of witnesses?

Here is the one that was born in Harston (presumably the one who's baptism you have found).
But whether she is the one who marries Mr Dale, is another matter :-

Pallot's has a marriage for Francis Shelton of Garthorpe to Sarah Starbuck of Eaton in 1827.

The 1852 marriage was registered in Oakham district which although in Rutland, includes a couple of Leicestershire places, one of which is Knossington, just on the Leics side of the county border, which perhaps clarifies that part of the puzzle.

Thank you all for the information so far. 

As to Mary's marriage certificate: no I only have a transcript for that & I located the same info on FamilySearch & A.

I do have Mary's death certificate which as we know is often an issue and in this instance probably more so given she died in a hospital and the Dr certified her death.

As to "...Francis Shelton of Garthorpe to Sarah Starbuck of Eaton in 1827".  I initially had that couple as Mary's parents; then I locate another immigration record the clipping provided was from that record.  This then threw everything up in the air.

I had hoped to locate an actual marriage record but so far I can only locate transcripts on the various sites.  The actual marriage record may well have provided more detail such as ages and fathers and occupations

As to the "...huge gap between the last two children.." definately a strong possibility however the marriage between Sarah Starbuck and Francis Shelton was 1827 which is perhaps a tad earlier than we think for Mary's birth to another mother called Eliza.

Familysearch has baptisms in Eaton for:

...all children of Francis & Sarah.
