I think I will need to work out how to get his birth certificate for more details. Hopefully this will confirm a home address and mothers maiden name, I could use to search the 1941 Census.

Civil registration did not begin in Ireland until 1864.
Before that date you need parish records.

Did your ancestor marry in Manchester?

As I said earlier, if you post what you already have, we will try to advise.

There are a couple of published trees for a John Freeman with mother, Ellen. Is that your family?
There are children born in Manchester on that tree. Those birth certificates would give you Ellen's maiden name and may tell in your Irish search.

Not sure what census you mean here. The latest available U.K. census would be 1911. The 1901 census is the 1st complete census for Ireland- small bits of other years do survive for a few places.
