Baker + Confectioner

I read somewhere that a lot of Germans resident in the UK worked as 'sugar-bakers'. An ancestor of mine was a Journeyman Baker and Confectioner.  I know it was common for Germans to work as bakers in the UK, but what about confectioners? I know there is such a thing in Germany called a 'konditorei' where people go to buy pastries and drink coffee, is there a connection?

Or making confectionery was a way of being productive during the hours it took for traditional yeast to make bread rise.

As he was a baker and confectioner, would he have made sweets such as liquorice or flower based confectionary such as cakes or pastries?

A baker and confectioner would make cakes, light pastry, buns and other small goods. A  confectioner making sweets is a different trade.

... and a sugar-baker was another different trade - a labourer in a sugar refinery.
