Just a small point
William was 35 and Dorothy 30 in 1841 (presumably rounded) .

I don't get how the son John became William  ???
Has a baptism been found for him.?

Lizzie, yes, I was just starting to look

As his name was William and his father was alive, to save duplication of responses in their home,
John was used to distinguish between the 2?

Maybe therefore we are looking for William John Pritchard ?

The trigger for emigrating could/may have been the death of his mother ?

As he would have been on his own anyway . . . . . ?

So death some time between 1851-1853 ?

Good find
That confirms his name. Dorothy's father was called John according to transcript of her marriage to Joseph Strong, so perhaps it was a nickname to distinguish him from his father as Ray mentioned earlier.

Has anyone found Joseph Strong on a census? If the 1863 death is his he should be on 3 censuses. He isn't at home on census night 1851, there is a possibility on 1841, a tailor in the Dearlove household.

Looks like Joseph the tailor married someone called Martha and is in Holborn, London in 1851

This may be a coincidence but...

Searching for Dorothy (without surname) b Newark abt 1807 in 1861 comes up with Dorothy Underwood wife of Walter living in Nottingham.
Marriage in Lambeth district Q1 1875 for a Walter Underwood and one of the two possible brides is Dorothy Strong.
So did Dorothy separate from Joseph Strong, go to live with Walter Underwood, then marry him after she was widowed?

I have found Walter in 1851 in Banbury, he says he's married but wife not with him. He is down as a visitor occ Commercial traveller

1851 Dorothy is a boarding/lodging house keeper.
Maybe they met, at some point, if he stayed with her while he was Commercial Travelling?
