Hello Eric & welcome to Rootschat. What denomination were the Sweetnams?
www.nationalarchives.ie for Tithe Applotment Records there is a record here for a George Sweetman (note different spelling) residing in Ballybrack in 1827.You can also check the Griffiths Valuation records on this site where a George Sweetman is recorded in Ballybrack in 1853.
I dont know if you have the death record for George - if not the details are Death registered 3rd Quarter 1871 Reg District Schull Co Cork  Volume 15 Page 347. You can obtain a photo copy of this cert if you go to www.groireland.ie for 4Euros.
Civil Registration wasnt introduced in Ireland until 1864 so for marriage, baptisms etc you would have to rely on Church records. Rgds
If your ancestors were not RC take a look at http://www.ireland.anglican.org/library
