Mary Barnes 1861 Southwark

Hit a bit of a brick wall.  Looking for a Mary Barnes (possibly Mary Ann Barnes) born in Southwark 1861. Married a Henry John Saunders (sometimes listed as Harry) and had children Mary Ann, Ernest, Eliza, Ellen, Rebecca and May.  By 1911 only Mary, Rebecca (my great grandmother) and May are listed.  The census is a complete mess so to be honest I'm not sure if Mary was quite all there it's that bad.  I've really not found any evidence of her birth or parents yet, which is what I'm after. I'm only about 85% sure her name was Barnes as I haven't yet got Rebecca's birth certificate to confirm. 1891 and 1901 they are in Southwark, 1911 they are in Bermondsey. 
London: Brown, Blaney, Rose, Haine, Tregunno, Harley, Cox
Devon: Willis, Phare, Stedwill, Edwards, Bissett
Also Shelton USA & UK and Schmidt Germany

Have you got the marriage cert which should name her father and give his occupation?

Hi the only marriage which depicts a Henry John Saunders and a Barnes, was 25th December 1880 All Souls, Newington Mary Ann Caroline Barnes Father George occ Cooper, witnesses George Barnes Luece? Barnes

EDIT if you have not purchased one of the children's birth certificates, then how/where does the Barnes surname come from?

Freebmd has a Mary Ann Caroline Barnes born in St Georges Southwark in 1858.

Family are in Southwark in 1861. She is listed as Mary A K Barnes age 3. Father George Barnes, Cooper age 27 born ? . Mother Jane age 26 born Lambeth.

Ancestry have the marriage in 1854 in St Pauls, Deptford of George Barnes, Cooper, son of John Barnes, Cooper to Jane Collins daughter of James Collins, Bootmaker. Jane's father is with the family in 1861 ( listed as James Collings).
