This is interesting - 5 June 1897 [Weekly Mail]

A prisoner named George Cook. who was arrested at Cardiff on a charge of stealing watches from Tylorstown, escaped from Pontypridd Police Station on Wednesday, but was subsequently traced to Fairwater, near Cardiff, where, after a terrible struggle, he was captured by three Pontypridd constables who had been sent in his pursuit.

Is there any way of obtaining Pontypridd prison records at all to find out about this? maybe he was a wanted man in Devizes Wilts, hence they moved to Wales and why the surname change to Smith in 1891c as they lodged by the  Porth Police Station, just a thought.
