Taxation Records at The National Archives

I have found records relating to various taxes including the Hearth Tax at the National Archives in London. However there appear to be two dates for each entry in the catalogue. One appears to be the "Document Date"  and the other the date of the "Tax Grant". Which of these should I record for the date on which the tax was taken?
