I think I may have found him 1861? would either of you be able to look up Frederick Witsenburg, I got that name from Family.org

Frederick Witsenburg is a lodger at 2 Upper Brunswick Street, St. John at Hackney, Hackney, London in 1861 occupation Carpenter age 78 so born 1783 in Hertfordshire.  He is described as a widower.

He is lodging with William Hills and his wife Jane.

Looking at the census image, it definitely looks like Wittenbury to me.
