Henry was somewhat economical with the truth about his age when he married.  Aged 49 on 1859 marriage cert - aged 56 in 1861 ::)

I have to apologise to you both but i just realised if you are not Catholic you have to get baptised in order to marry in the Catholic church, with this in mind i looked for a baptism for an adult Elizabeth Dixon and found what appears to be her aged 22 on 31 May 1867 getting baptised in Bray dtr of William Dixon and Elizabeth BURTELL/BURTELY.

BAPTISM 1216 HERE

I think that surname is Birtley/Birtle - when I was looking for mmn on the GRO site I came across at least one of the Dixon births with that mmn but discounted it.  I need to go back and have another look

I suppose speaking with an English accent to an Irish priest Birtles would sound like Burtell.

I have been through the  Bray parish register looking for Dixon siblings and did not find any with same parents though there are plenty of Dixons in the same area.
One man i found was Henry Dixon and MaryAnne Whelan who had oodles of children from the 1860s to the 1870s but could not find a marriage for them,i looked up one of the childrens births on the civil register and Henry Dixon was a train driver maybe just coincidence.

thank you both for all your help.
