Back to the question in hand - who was this man? He appears to be well dressed but not in the manner of a groom. He has a fob chain & presumably a watch. Perhaps the landlord of an Inn?
In 1891, Mary Jane was described as a 'refreshment house assistant' ('Inn' inserted above it), but by 1901 had joined her mother in the boot making trade. The Royal Oak Inn & The Anchor Inn were on Alphington Street - unfortunately neither is still in existence so no likelihood of photos of publicans past.

Don't know why I didn't see any of the horse before , :oI can now see the horse and reins in front of the gentleman.
