Well I'm not getting very far I'm afraid.  Possible births for Samuel seem to be:

St Philip
1 Oct 1804 s/o Thomas & Ann 
30 Jul 1804 s/o James & Ann
29 Jul 1805 s/o Thomas & Ann (not finding a burial for the first one though)

And St Martin
5 Mar 1805 s/o William & Mary (born 11 Jan 1804)

Possible marriages:
St Philip: 4 Oct 1824 – Samuel Jones & Mary Heath
St Martin: 19 Jun 1825 – Samuel Jones & Mary Cassady

I'm leaning towards the 1825 marriage simply because its closer to the birth of their first child and took place at the same church as the baptisms (listed below), although it's worth noting that a widow named Ann Cassedy married widower William Cooper Royle on 17 Jan 1830 and the witnesses were Samuel & Mary Jones.  This marriage was also at St Martins.

Children of Samuel & Mary:
Sarah baptised 7 Jun 1827.  Address was Norfolk Street
Ann 18 Aug 1828 (born 27 Jul 1828) Norfolk Street   
Emma bap 26 Dec 1831 (born 13 Nov 1831) Summer Street 

Unfortunately there are so many Jones, and with names common to more than one family you would need to put some serious work in to trying and identify the separate family groups to be certain of the parents of your Samuel.
