Can you please tell me who that census was for in 1871?

The 1871 census was for John Algier and his wife Agnes. There are 6 boarders living with them aged from 3 to 14.
Beginning to wonder if Algier is the right name as I can't find trace of him appart from this census.
You say the parents on Mary's marriage cert are John and Agnes, maybe these are the same.

Govan was a separate parish, with its own, very well kept, records. They have survived and are with the other 2 Glasgow parishes at the Mitchell.
Paterson, Torrance, Gilchrist - Hamilton Lanarkshire. 
McCallum - Oban, McKechnie - Ross of Mull Argyll.
Scrim - Perthshire. 
Liddell - Polmont,
Binnie - Muiravonside Stirlingshire.
Curran, McCafferty, Stevenson, McCue - Co Donegal
Gibbons, Weldon - Co Mayo.
Devlin - Co Tyrone.
Leonard - County Donegal & Glasgow.

Have you looked at the marriage of John Goldie and Agnes Stevenson to confirm his parents' names?

I think young Mary was already with John Goldie and Agnes Stevenson by 1871. This is a not great transcript from 1871:

Jean Goldie 21 collier b. Glasgow
Agnes Goldie 22 b. Campsie Stirlingshire (matches with 1881)
Mary Goldie 4 daughter b. Glasgow

For Michael Goldie and wife Margaret, I can only see one baptism for one of their children on the SP RC database:

Margaret Goldy b. 3/4/1843 and bpt. 18/4/1843 at Glasgow, St Andrew's
Parents Michael Goldy and Margaret Fisker

Have you found Rachel in early censuses pre her death in 1870? Struggling to see her so far (or also the John Goldie we have been discussing here pre 1871).

Possible death entry for Rachel's mother?

Possible remarriage for mother Margaret as I think she also shows as Bryson, with the same refs:

The 1871 census shows a Margaret Bryson, aged 53 and born in Ireland, at the City Parish Poohouse. Rachel had been there at the time of her death in 1870 from what you mentioned earlier.

I think this might be Rachel with mother in 1851. She is down as Gourlay from the Freecen transcript. The family showing as lodgers in the Blair household :

John Gourlay 10 b. Glasgow
James Bryson 3 b. Glasgow
Catherine Bryson 10 months b. Glasgow

Address: 80 Bridgegate Street 2nd Land, Glasgow

There is this RC brith & christening entry on SP:

Rachel GOURLY b. 22/3/1839 and bpt. 28/4/1839. Parents Michael Gourley and Margaret LASHIRE.
Glasgow, St Andrew's

This would fit with this 1841 census entry:

Margaret Gourley 25 b. Ireland
Rachel Gourley 2 b. Lanarkshire
