I registered her death and used the 15th as that is the date she gave to me.  It was only subsequently that I found her baptism certificate which gave an alleged DOB as 2.1.08.

Marriage on 19 sep 1892 at St Augustine S Hackney between Eliza Bryan 24 spinster of 30 White post lane...

Possibly a red herring but ....
1891 census 30 White Post Lane

https://familysearch.org/ark:/61903/1:1:QHH6-MMM

1881 census
https://familysearch.org/ark:/61903/1:1:Q27S-ZSMK

The ages are right for Mary Ann and Eliza. Or has Mary A already been found in 1881? I'm getting a little confused. ;)

Not as far as I'm aware

I was looking at these two entries as a possibility for Eliza Bryan

Elizabeth Bryan occ servant in 1891

and in 1881 as a boarder at 34A and 36 Church St St Stephens Orphanage

I've managed to eliminate the Eliza BRYAN who married John Phillips.

1891 census-John and Eliza are on the previous page so not showing with their sons:

https://familysearch.org/ark:/61903/1:1:X94G-KLT

The family (minus Daniel) appear together in 1911.

Quote from: RosemaryHop
Samuel Mullins is my maternal Grandfather.

The earliest record I have found for him is the 1911 Census, where he is shown with his family - wife/partner Eliza (her family name was "Bryan") Called  her "Lizzie" in this census, and his children John, Sam, Margaret and Rose (my Mother).

The only other record I have for him is his death Certificate - 28 October 1928, Shoreditch.

John Bryan was certainly my Maternal Grandmother's Father and her Mother was
Mary Ann (nee Lay) but John Bryan didn't die until 1903 in Bethnal Green, so the dates don't tie in, although he did leave his wife when Eliza was young, so maybe she put deceased on the wedding certificate?
I am not sure where she was living at that time, as I could not find her in the 1891 census.

Mary Ann LAY father Matthew deceased
married 15 Jun 1862 St James the Great Bethnal Green
John BRYAN shoemaker f James weaver
Wits Frances Mary Lay & Thomas Lay

Do we have two Eliza/Lizzie/Elizabeth Bryan's who happen to be born around the same time
with a mother named Mary Ann?
  ???

1911 census Elizabeth with
John Phillips & children
and the other Lizzie with
Samuel Mullins & their children (which is the OP's family)

For ease of looking I have tried to list this family following Eliza with Daniel Stevens from 1901 census

I have the birth certificate of my maternal Grandmother, Eliza Bryan (partner of Samuel Mullins) and she was born  on 17 June  1868 in  Shoreditch  Her Mother was Mary Ann (nee Lay) and her Father was John Bryan, bootmaker.
