Occupations for William Buss and his son Samuel 1861 census

The attached clipping if for William Buss of Mayfield, Sussex.  RG10/1051/116 p 11

I need some assistance to determine both William and his son Samuel's occupations please.

Williams appears to be Huntsman (Harriers ? Pack [?]).  Samuel is ? Boy?

Samuel is a 'Baker boy'.

William definitely Huntsman [Harriers] am working on remainder....looks like Subsxx Pack....is William on 1881 census?

ADDED: in 1881 William is 'Huntsman to Mayfield Harriers Club'

Perhaps this was a 'Subscription Pack'  ???

By 1891 William is an ag lab. And 1901 aged 70 with 31 yr old 2nd wife & 3 children under 10  ::)

Can anyone work out what his second wife's name is???  Looks like Ansey Woodgate but what is her maiden name?  Her father seems to be Ansey but surname is a challenge???
